WIAW {03-14-2012}

Happy WIAW! Today I’m going to show you what I ate on Monday (or Moanday har har). If you’re unfamiliar with WIAW or want to link up, check out Jenn’s blog Peas and Crayons for more information.

{6:45 a.m.} Breakfast

I woke up feeling extremely dehydrated, so while I waited to feel hungry (and while the coffee was a’brewing) I drank an entire water bottle of water. Crazy right?

Breakfast was a bowl of toasted oatmeal flakes, multi-grain o’s, walnuts, raisins, banana, and blackberries with almond milk and a peanut butter spoon. I heart cereal :)

{11:45 a.m.} Lunch

My stomach started to growl earlier than usual so I dug into my lunch of mushrooms, leftover steamed vegetables, kale, tempeh, pizza sauce, and mozzarella.

I also tried one of TJ’s pre-packaged yogurt/granola combinations.

I liked the flavor but not the size. I could never just eat one of these for breakfast.

{3:30 p.m.} Snack

I didn’t want to get hungry during my exam, so I had half of an apple and the last of this mini chocolate bar before leaving work for class.

{7:00 p.m.} Appetizer

While I was “making” dinner, I snacked on some chips, mushrooms, and this new amazing dip from Trader Joe’s.

{7:15 p.m.} Dinner

Because I didn’t get home until late, I made a bag of TJ’s frozen polenta for dinner. Unfortunately it was teeny tiny! I divided it in half so that Ian and I could split it and that was my portion. It sure was tasty though :)

{8:00 p.m.} Dinner Part II/ Snack

Small dinner means bigger dessert/snack right? I had a cottage cheese parfait with mango butter, granola, cashews, and sunflower seed butter. Mmmm

And that’s that.

Winter? What Winter?

Even though Monday is my day off from training, it is my busiest and longest day of the week so I still wake up super early to get my stuff together, eat breakfast, and make myself look presentable.

Monday’s also usually mean a quick breakfast.

While I love making a good breakfast and often wish I had more time to cook before leaving for work/school, on Monday mornings I want absolutely nothing to do with the stove or oven. In fact, I’m usual so tired that if you put a pot in my hand I’m not sure I’d know what to do with it.

Enter cereal, my unofficial Monday morning breakfast of choice :) .

This bowl was stuffed full of Toasted Oatmeal Flakes, Brown Sugar Maple Mini-Wheats, raisins, 1/2 an unripe banana (my favorite), walnuts, chia seeds, and unsweetened almond milk. There’s also a peanut butter spoon hiding in the back!

One of the many things I’m loving about the oatmeal flakes is that compared to other cereals, they actually keep me full for a long time. So long in fact that I wasn’t ready for lunch until nearly noon (and I ate at 6:30 this morning!).

For lunch I packed an arugula salad topped with peanut sauce roasted chickpeas and TJs Peanut Vinaigrette.

I’m not sure what I was thinking, but I really threw a ton of chickpeas in there. Consider my chickpea craving more than quenched. Unless they come in falafel form, I will not be having chickpeas for awhile.

I also packed a honey greek yogurt with a little Love Crunch granola and a couple honey roasted sesame almonds.

I love those almonds, so good!

Like I mentioned before, Mondays are my long days that not only entail a full work day but also a 3 hour evening class on randomized clinical trials. I’m sure you’re all so jealous :P .

Anyway, when I got home, I threw together the easiest and simplest dinner ever, pasta leftovers.

The pasta tasted just as good tonight as it did on Friday.

Oh, and why the title of the post? Because today Chicago had temps in the low 40′s. That may not seem super warm, but to Chicagoans in mid-February, this is a near heat wave! I celebrated the unusually warm weather by wearing my Tom’s without socks!

I did have to suffer the cold heading home tonight, but it felt so good to not wear boots all day! Fingers crossed I didn’t just jinx the weather!

What’s your busiest day of the week?

Snacktastic

As predicted in my last post, about 5 minutes after hitting publish, I went looking for something to clean my palate get rid of my cilantro breath.

After rummaging a bit in the freezer, I found the dark chocolate mini pb cups I had stashed there after Christmas. I figured a taste test was in order, you know, to make sure they didn’t have freezer burn or anything ;)

No worries, they’re still good!

I did homework for another hour or two until I started to feel hungry.

I topped a small white corn tortilla with sunflower seed butter and fig jam and then put it in the toaster oven for about 3 minutes. I dipped the triangles into some plain yogurt topped with some sugar, chocolate, & coffee bean grindings. I also had a clementine.

My snack powered me through a couple of hours of good homework AND some race searching. Let’s just say I have the rest of 2012 pretty much planned out in terms of racing ;)

Dinner
I made my taco soup recipe for dinner. I went on a whim and added frozen peas to mine. It was a nice switch up! I also tried a new cornbread recipe but both Ian and I thought it was bland so I won’t post it for you guys. Now what do I do with the leftover cornbread?

I topped my soup with some tortilla chips and shredded cheese.

Yumm!

After a hot dinner I wanted something cool for dessert. I mixed pumpkin, greek yogurt, peanut flour, and a little maple syrup and topped it with granola (+ two cereal squares) and raisins.

It hit the spot.

I have a little more homework to get to and then I’m calling it a night, finally.

Overnight Oats in an Apple Pie Preserves Jar {OOIAAPPJ}

Mornin’!

My day started out with a 5 mile treadmill hill workout. It was short but intense, just the way I like it ;) .

Then breakfast was had.

Into the jar went 1/3 cup oats, 1/3 cup nonfat greek yogurt, 1/3 cup unsweetened almond milk, 1/2 a sliced apple, and lots of cinnamon. It probably could have used chia seeds but I totally forgot!

Topped with Honey Almond & Flax 9 Whole Grains cereal because we’re out of granola.

Served with one two cups of coffee.

Runner’s World recently posted an article on the 10 Rules of Fueling so I thought I’d share it with you guys. Remember though that no runner is the same and you need to do what’s right for your body.

Minor Struggles

Happy Friday :) . I’m still adjusting to not having the luxury of eating breakfast at my desk but having to eat early at home in order to get to class on time (yes I could eat in school but in classes of 10 students I would feel slightly awkward).

Today has been one of those days. You know, when you’re running late and have to change the toilet paper roll, minor inconvenience but it takes some time. Or when you’re rushing to pack your bag and realize you need to unload the dishwasher or run the risk of your cat stealing all of the silverware out of the sink and hiding it around the apartment (yes my cat is a hoarder, I’ve learned to accept it).

I was also halfway out the door when I looked back and realized Sonic barely had any food in his bowl. Sigh. Anyways despite having to change the toilet paper roll, unload the dishwasher, and feed my cat, I still made it to class on time and am now sitting at work chowing down on lunch. Whew!

To rewind.. my morning started with the leftover bits of a chai-banana smoothie I made Ian last night.

The last bit was loaded with chopped up oats and was the perfect fuel for my 7 mile run on the treadmill. It was my best run this week thus far and I attribute it both to the smoothie (more fuel this morning) and a cereal snack I had last night before bed.

Breakfast was simple, a honey Chobani and a pumpkin muffin.

Consumed with Kahlua coffee and soy creamer and the last clementine.

I crumbled the muffin into the yogurt along with a tiny bit of crispy rice cereal for more texture.

I also decided that due to the bitter cold, I would forgo any attempt at looking cute today. Instead- layers, layers, layers!

And good thing I did, it’s currently snowing and we’re predicted to get 5-8 inches today!

Lunch was the last of the fire-pot soup from Monday and an unpictured apple.

How do you plan for busy mornings? Any tips? I think I do a good job of packing most of my bag and food (duh!) but some things like putting away laundry/dishes I always forget to do.
