Pumpkin Waffle Stack

Yesterday started out just like any other Wednesday. I woke up, put on my new running shoes and headed out the door for 4 recovery miles. My new shoes felt great (as they should, they’re the same model as my old pair) but I have a major dilemma. I was sent red shoelaces along with the black, what do you guys think would look better?

Anyway like I mentioned, Wednesday was pretty normal until I had an absolutely amazing breakfast idea and created a pumpkin waffle stack!

(P.S. sorry to anyone who thought I actually made pumpkin waffles, I would love to but don’t have a waffle maker or even the kitchen space for one).

I took two TJ’s gluten free waffles and threw them in my toaster oven. While they were toasting, I whipped up some pumpkin pie pudding (less milk so that it would be thick enough without sitting overnight). Once the waffles were done, I spread on waffle with the pumpkin pie pudding, topped it with banana slices, and then placed the other waffle on top. Next, I added some more pumpkin pie pudding, a few more banana slices, and then a hearty spoonful of sunflower butter. Perfection!

I also like to put the entire creation in the microwave for about 30 seconds to warm everything up and melt the nut butter.

I even played around with the filling and found you could sub the maple syrup and maybe even the chia seeds with protein powder (mine has ground chia in it). This makes a thicker pudding that might actually be a better filler for the waffles. I ended up eating it as pudding with some granola and it was really good!

While I’m very much an oatmeal girl, these waffles stacks are super fast and convenient to make in the morning, especially when the filling is made before. I can see myself eating this more frequently during the pumpkin fall season.

Sunday Things {04-29-2012}

1) I’ve had this weird almost nausea the past few days that has me eating lots of carbs because veggies just do not sit right. This is okay though because I have discovered the best snack ever…

Bread (gf) with cookie butter, chocolate chips, and banana slices. Calories don’t count when you’re sick right?

2) Sam Adams beer taster glasses are great for mini parfaits. Especially if I just want something a little sweet after a meal.

3) We recently changed Sonic over to a different type of cat food that has more protein and less “filler”. To say he likes it is an understatement. The kitty ate a big bowl of food in just two days. I’ve decided to keep an eye on him so that we don’t end up with a kitty like this

4) I took my new shoes out for a 5 miler this morning. Despite feeling dizzy and sick (probably should not have gone whoops), I loved my shoes! There was way more heel support and my foot didn’t slip as much. Nice! I also had no hamstring/heel pain so I am planning on increasing my mileage next week.

5) Another sunflower seed butter jar bit the dust this weekend so I made a pot of my couscous cottage cheese strawberry oatmeal and poured it into the almost empty jar.

I topped it with walnuts and crunchy sunflower seed butter (LOVE).

6) Tylenol and I are new BFFs. I totally would not be functioning if it weren’t for those little pills.

7) I only have two paper due before graduation. Unfortunately, feeling sick along with pure lack of motivation has me procrastinating like woah. I need to pull it together for a few more days!

8) Scooters Frozen Custard is not only good for the soul but also amazing on sore throats.

My little guy (vanilla custard, coconut, and chocolate chunks) is in the front and Ian’s (vanilla marshmallow chip custard, peanut butter, and banana) is in the back. Yum yum!
