Monday Goals: Week 2

Good morning and happy Monday :P . The weekend always seems to fly by doesn’t it?

I’m starting my day off with a bowl of cereal: 1/2 cup Multi-grain O’s, 1/2 cup Toasted Oat Flakes, raisins, walnuts, banana, chia seeds, a peanut butter spoon, and unsweetened almond milk

I know it seems like a ridiculous amount of fancy-ing up for a bowl of cereal, but it’s the only way that cereal will keep me full for awhile.

As it’s Monday and has officially been a week since I made my first set of Monday goals, I’d like to revisit them to see how I’ve done:

Monday Goals, 2/27/2012
1. Get in bed every night by 11 p.m., no exceptions. I can stay awake in bed but I must physically be there by 11. I managed to get myself in bed every night before 11 except for Saturday night (but I’m pretty sure I fell asleep on the couch before 11 anyway), it made a huge difference, even if I wasn’t asleep by 11. I slept better and felt more rested during the week.
2. Avoid mindless snacking, especially on higher calorie foods like granola. Constantly snacking makes me feel gross and I need to learn to differentiate real hunger from boredom/stress. I did pretty good with this until my heel started hurting and my emotions took over, mastering this goal is always going to be difficult and I made a good attempt last week to stop.
3. Listen to my body. It’s no doubt that I pushed myself yesterday, so this week I need to take it easy and if my body is sore/tired, respect it. This may include cutting back on some mileage and that’s ok, there is no need to force an over-use injury. I have to say that I wish I hadn’t had to do this :( . Unfortunately, heel pain forced me to take a break from running and I was pretty successful except for a run on Friday that probably shouldn’t have happened.

And now this week’s goals!

Monday Goals, 03/05/2012
1. Get in bed every night by 11 p.m.
2. Avoid mindless snacking, especially on higher calorie foods like granola.
3. Play with Sonic for 15 minutes every night before bed. He’s been waking me up in the morning or playing too much while we’re trying to go to sleep, but I’ve noticed the nights where we play before bed (as opposed to earlier) he lets me sleep
4. Every night think of one positive thing that happened during the day and write it down. It’s no surprise I’m upset and my heel and not running but just because my foot hurts doesn’t mean thee aren’t other good things going on in my life. I’m hoping to shift my attention to them and away from my foot.

Chocolate and Endurance

The weekend is always too short. Is it really Monday again?

Early Monday’s always call for an easy breakfast (and lots of coffee!!).

Crispy rice cereal; Honey, Almond, & Flax cereal; banana; and raisins. Plus a peaut butter spoon.

Mmmm it’s no  White Chocolate Wonderful but it’s still really good!

And breakfast would not be complete without one two cups of coffee.

Also, in running news, animal studies are indicating that eating chocolate may actually result in increased endurance capacity. What do you think? To me it seems like another great reason to eat chocolate :P .

Breakfast Sunflower-a-dilla

Good morning! I have a new favorite breakfast to show you :)

Can you figure out what it is?

No?

A breakfast quesadilla sunflower-a-dilla.

Ingredients
2 small tortillas, I used white corn
Sunflower seed butter, peanut butter, almond butter, etc.
Banana
Raisins
Cinnamon or Sugar, Chocolate, & Coffee bean grinder (I used the latter)

Spread nut butter on one tortilla, be sure to coat the entire side. Thinly slice banana and arrange slices and raisins on the tortilla. Sprinkle cinnamon or grind spices over the nut butter and bananas. Place other tortilla on top and cook in a pan or on a Foreman/griddle.

Mmm the sunflower seed butter was melty and the bananas carmalized a bit giving this breakfast not only a great taste but also amazing texture!

This is the perfect, comforting, Monday morning breakfast. Especially when served with some coffee and an adora disc. Coffee is a must on Monday mornings ;)

Workin’ for the Weekend

Happy Wednesday! How is everyone holding up? Only three more school/work days until the weekend :)

Dinner
Last night, I made Jenna’s Orange Peel Shrimp. I know a couple other bloggers have bookmarked this recipe and all I have to say is make it ASAP ;)

Ian and I may have gotten a little carried away with zesting though and our shrimp were a little on the bitter side. But it was nothing a little rice couldn’t handle.

I had about 5-ish shrimp with some white rice (leftover from Joy Yee) and a glass of Chardonnay.

Dinner was early so a couple of hours later I mixed some pumpkin, peanut flour, almond milk, and pumpkin butter in a glass and topped it with granola and raisins.

Workout
I woke up this morning extremely achey and lethargic. I somehow managed to motivate myself to get ready to run and headed out for my mid-week 10 miler. Almost a mile into the run I started to feel better, my muscles loosened up and running became easy. My body felt so good this morning, I almost wish I could have knocked out my weekly long run today!

Breakfast
This morning I tried Lilveggiepatch‘s version of Oatless Oats. I followed the recipe pretty closely except I added raisins, pumpkin pie spice, and maple syrup and used unsweetened almond milk instead of flax milk.

I topped mine with a sliced banana and a sunflower seed butter drizzle. Yum!

Random
Around 10 p.m. last night, Ian and I realized that we hadn’t seen Sonic in awhile. We looked all around the apartment but still no dice. Finally, out of the corner of my eye, I saw this little head peeking out of Ian’s backpack.

“Daddy is it take your son to work day?”

Monday Breakfast and 11 Random Things

On an early and time-crunched morning, one of the easiest things to throw together for breakfast is an old-fashioned bowl of cereal.

I love mixing cereals, so my bowl contained TJ’s Crisp Rice, Honey Almond & Flax 9 Whole Grains cereal, the last of the Pumpkin Flax Plus granola, raisins, half of a banana, almond milk, and a little spoon of sunflower seed butter.

Mmm. Hit the spot!

1. I’m lactose intolerant but I refuse to give up dairy. I just love yogurt and ice cream waaay too much

3. Until last year I didn’t know if I could keep a plant alive and now I’ve had a cat for 6 months (I promise he’s alive)

1. What’s your favorite food? Hmm, this is a tough question because I think it changes all the time. Right now I’m feeling yoatgurt, overnight oats, and tempeh. Obviously leaning toward breakfast foods.

3. What’s your idea of a perfect weekend? A little fun, a little relaxation, a little productivity, and some good workouts :)

7. Why did you start blogging? I guess I just got tired of being a “lurker”. I also wanted an outlet to talk about healthy living and form connections with other like-minding individuals.
