Pumpkin Waffle Stack

Yesterday started out just like any other Wednesday. I woke up, put on my new running shoes and headed out the door for 4 recovery miles. My new shoes felt great (as they should, they’re the same model as my old pair) but I have a major dilemma. I was sent red shoelaces along with the black, what do you guys think would look better?

Anyway like I mentioned, Wednesday was pretty normal until I had an absolutely amazing breakfast idea and created a pumpkin waffle stack!

(P.S. sorry to anyone who thought I actually made pumpkin waffles, I would love to but don’t have a waffle maker or even the kitchen space for one).

I took two TJ’s gluten free waffles and threw them in my toaster oven. While they were toasting, I whipped up some pumpkin pie pudding (less milk so that it would be thick enough without sitting overnight). Once the waffles were done, I spread on waffle with the pumpkin pie pudding, topped it with banana slices, and then placed the other waffle on top. Next, I added some more pumpkin pie pudding, a few more banana slices, and then a hearty spoonful of sunflower butter. Perfection!

I also like to put the entire creation in the microwave for about 30 seconds to warm everything up and melt the nut butter.

I even played around with the filling and found you could sub the maple syrup and maybe even the chia seeds with protein powder (mine has ground chia in it). This makes a thicker pudding that might actually be a better filler for the waffles. I ended up eating it as pudding with some granola and it was really good!

While I’m very much an oatmeal girl, these waffles stacks are super fast and convenient to make in the morning, especially when the filling is made before. I can see myself eating this more frequently during the pumpkin fall season.

Heat Wave

Is anyone else as glad as I am that today is FINALLY Friday? If only it weren’t so hot right? I can’t believe the high temperatures as well as the fact that it’s going to be hot all next week. I guess we all better get used to it.

I made the really dumb mistake of biking to work yesterday. I was running late and riding my bike is the fastest way to get to work, but I should have known better. I got sweaty on my way to work (no big deal) but literally couldn’t breath on my ride home. It took my lungs a few hours to recover and I’m in decent shape, I can’t imagine what it would have been like if I wasn’t a constant worker-outer. Note to self: don’t bike to work when it is above 90 degrees.

When I got home, I tried this new to me beverage.

It cooled me off and was really tasty. The ingredient list is short and has no added sugar or unfamiliar ingredients. There’s a limeade and a ginger flavor and I have my eye on both. I found this one at Whole Foods and haven’t seen them elsewhere but my guess is small health food stores or other organic markets would have them.

Initially I wanted sweet potato fries for dinner but even though dinner was a few hours after my horrendous bike ride home, I did not want anything warm. Instead I had a cold millet salad (unpictured) and a pumpkin pudding (pumpkin puree, mashed banana, cinnamon, pumpkin pie spice, maple syrup; topped with pumpkin seeds, walnuts, and figs).

This pumpkin came from a box and I liked it a lot less than the canned variety. I also learned a valuable lesson, when scooping from the bottom of the box, do not bring the box too close to your face- you will get pumpkin on your forehead.

I spent the rest of my evening watching trash t.v. (the new Snooki and JWow show definitely fits the bill) and reading Harry Potter. Interesting combination right?

This morning I woke up at 5 and headed out for a 4 mile run. It was already hot, although not as hot as yesterday, but it was also extremely humid. I ran down by the lake and kept running into swarms of bugs- not fun! I finished 4.03 miles in 31:44, for a 7:52 min/mile average.

Then I headed to the pool. Apparently, everyone and their mom decided to swim today and the line for the four lanes was three deep by the time I got out onto the pool deck. Fortunately it only took 10 minutes for me to get into a lane but I was most definitely shooting the man who was swimming with snorkeling gear dirty looks. There is no need for that at 6:30 a.m. at a gym pool.

For whatever reason my appetite has not subsided with the heat like it usually does. I’ve actually been pretty hungry. Overnight oats have been my breakfast of choice for the past three mornings because they’re cold & don’t dirty my blender, filling, and can be prepped the night before.

This time I did things a little differently though. Last night I mixed together 1/2 cup oats, .5 tbsp chia seeds, .5 tbsp honey, a little cinnamon, and 1/2 cup almond milk. This created a really chewy batch of overnight oats. I topped them with almond butter, pumpkin seeds, banana slices, and a few Hail Merry almonds. Delicious!

I decided to skip the bike ride today given the warm temperatures (the car fumes make it SOO much worse) so I need to head off to work a little earlier, have a wonderful Friday!

Snacktastic

As predicted in my last post, about 5 minutes after hitting publish, I went looking for something to clean my palate get rid of my cilantro breath.

After rummaging a bit in the freezer, I found the dark chocolate mini pb cups I had stashed there after Christmas. I figured a taste test was in order, you know, to make sure they didn’t have freezer burn or anything ;)

No worries, they’re still good!

I did homework for another hour or two until I started to feel hungry.

I topped a small white corn tortilla with sunflower seed butter and fig jam and then put it in the toaster oven for about 3 minutes. I dipped the triangles into some plain yogurt topped with some sugar, chocolate, & coffee bean grindings. I also had a clementine.

My snack powered me through a couple of hours of good homework AND some race searching. Let’s just say I have the rest of 2012 pretty much planned out in terms of racing ;)

Dinner
I made my taco soup recipe for dinner. I went on a whim and added frozen peas to mine. It was a nice switch up! I also tried a new cornbread recipe but both Ian and I thought it was bland so I won’t post it for you guys. Now what do I do with the leftover cornbread?

I topped my soup with some tortilla chips and shredded cheese.

Yumm!

After a hot dinner I wanted something cool for dessert. I mixed pumpkin, greek yogurt, peanut flour, and a little maple syrup and topped it with granola (+ two cereal squares) and raisins.

It hit the spot.

I have a little more homework to get to and then I’m calling it a night, finally.

Workin’ for the Weekend

Happy Wednesday! How is everyone holding up? Only three more school/work days until the weekend :)

Dinner
Last night, I made Jenna’s Orange Peel Shrimp. I know a couple other bloggers have bookmarked this recipe and all I have to say is make it ASAP ;)

Ian and I may have gotten a little carried away with zesting though and our shrimp were a little on the bitter side. But it was nothing a little rice couldn’t handle.

I had about 5-ish shrimp with some white rice (leftover from Joy Yee) and a glass of Chardonnay.

Dinner was early so a couple of hours later I mixed some pumpkin, peanut flour, almond milk, and pumpkin butter in a glass and topped it with granola and raisins.

Workout
I woke up this morning extremely achey and lethargic. I somehow managed to motivate myself to get ready to run and headed out for my mid-week 10 miler. Almost a mile into the run I started to feel better, my muscles loosened up and running became easy. My body felt so good this morning, I almost wish I could have knocked out my weekly long run today!

Breakfast
This morning I tried Lilveggiepatch‘s version of Oatless Oats. I followed the recipe pretty closely except I added raisins, pumpkin pie spice, and maple syrup and used unsweetened almond milk instead of flax milk.

I topped mine with a sliced banana and a sunflower seed butter drizzle. Yum!

Random
Around 10 p.m. last night, Ian and I realized that we hadn’t seen Sonic in awhile. We looked all around the apartment but still no dice. Finally, out of the corner of my eye, I saw this little head peeking out of Ian’s backpack.

“Daddy is it take your son to work day?”

Pumpkin Overnight Oats

I started my morning bright and early at 5:30 with a pre-run snack of a date and some orange cranberry spread.

I then hit the gym for 7 miles on the treadmill. To switch it up and keep myself entertained, I ran the first mile at 7.5 mph and then increased my speed at every mile for negative splits. I think my last mile was at 8.1 mph. My legs felt surprisingly fresh today :)

As much as I dislike the gym, I’m very lucky to have access to one for times like today when the weather is miserable. I’d highly recommend having access to a gym (or at least a treadmill) if you’re training for a race in any area that experiences snow, ice, and really cold temperatures.

Moving on to more delicious things :P ….

I brought pumpkin back to breakfast today.

Pumpkin Overnight Oats
1/3 cup oats
1/3 cup greek yogurt
1/3 cup unsweetened vanilla almond milk
1/3 cup pumpkin
1/2 banana, sliced
1 tsp chia seeds
1 tsp maple syrup
1-2 tsp pumpkin pie spice (I like a lot)

Mix all ingredients and place in fridge overnight. Remove in morning and add toppings.

Like usual, I topped my overnight oats with granola. Yum, I love the crunch!

I had my overnight oats with iced coffee with almond milk and an adora disc.

Quick and easy breakfast for a busy morning!
