Vacation Eve

EDITED TO ADD: This post was supposed to go up last night. I don’t know what happened but sorry for the delay!

My holiday vacation from work officially starts tomorrow at 4 p.m. making tonight vacation eve :P

Honestly, I’m just trying to look on the bright side. While I’m happy with my job and grateful to be employed, my head and heart just are not in it this week. I’m so ready for a break!

This afternoon dragged on. I tried to break it up by walking around the office (refilling my water bottle, grabbing a cup of coffee sludge, and chatting with coworkers) but the last three hours of the day felt like an eternity. I was so glad to get out of there at 4!

All afternoon I had been craving yogurt (weird right?), so when I got home I made myself a small snack while I packed breakfast for tomorrow.

I had a little greek yogurt with a crushed up caramal wafer and one eggnog covered almond. I promise the randomness didn’t make it any less delicious ;) .

Dinner was nice and easy tonight. I’m going out of town Wednesday morning and Ian is joining me Friday, so it didn’t make sense to purchase a lot of groceries for the week. Plus, Ian will more than likely eat out or have cereal for dinner the nights I’m gone, so stocking up on produce would have been wasteful.

Thus, dinner tonight was an Indian feast. We reheated some frozen Indian food from TJ’s (butter chicken for him and channa masala for her) and then cooked some garlic naan in the oven. Yum.

I love Indian food but hate the bloat I always get after eating it so I tried to practice portion control and served myself about half of the meal and only ate half of the naan.

I topped my channa masala with greek yogurt and hot sauce. I know this makes the dish nontraditional but I love the taste of curry, greek yogurt, and hot sauce. I just couldn’t resist.

Naan is the best. I would like Indian food disproportionately less if it didn’t include naan :P .

Dinner all together with a little slurp of kombucha in the back.

Portion control worked, I feel satisfied but don’t feel bloaty. I also have leftovers for lunch tomorrow, score!

Dessert was another product from TJs, a tiny ice cream cone.

Although it was soo tiny that my sweet tooth is not satisfied. Boo.
