Things I’m Lovin’ Thursday ~ 03/08/2012

Hey guys, happy Thursday!

Today I thought I’d share some things with you that I’ve been enjoying lately that haven’t been posted on the blog.

(1) Waffle stacks

I mean, just look at those layers! From bottom to top there’s waffle, peanut flavored yogurt, banana slices, waffle, more yogurt, leftover banana, and sunflower seed butter.

I almost died the first time I ate this, so. freaking. good.

2) Sweat-tastic, hardcore workouts.

As upset as I am about not being able to run, I’m enjoying getting my sweat on in spinning class. I forgot how much cycling raises your heart rate! I sweat so much more cycling than running (maybe it’s an efficiency thing?).

Also yesterday morning I woke up to go to a 5:45 spin class and then headed to the pool for a mile swim. When I walked into my apartment it was 7:45 and I had already cycled and swam, I felt so hardcore!

3) Kale chips

I really should just say that I’m loving ketchup because that’s really what kale chips are to me, a vehicle to eat ketchup! Kale chips are a tad bit healthier than fries though… the sacrifices I make ;) .

4) This little face

5) This snack

I know it looks like a hot mess but it tastes delicious. Just microwave a sliced banana with a scoop of peanut butter for one minute and then stir in yogurt and granola. Mmmm.

6) Ice packs

I was told not to take Ibuprofen for my heel and it wasn’t working anyway, so ice packs have become my best friends. Plus, icing my foot is a great excuse to do homework on the couch in front of the t.v. :P

7) Speaking of t.v., I’m loving that my apartment building is now HD compatible.

Yes, I was living in the dark ages and watching non-HD tv because my apartment building “couldn’t handle it”. Well that just changed and HD was installed yesterday, yay!

8) Cottage cheese parfaits

I know I’ve blogged about these before but they are just so good! I’m loving them as a snack or even for breakfast.

This morning I had the one above that was stacked with fig jam, cottage cheese, banana, roasted cashews, more cottage cheese, banana, granola, and sunflower seed butter. Ah-mazing :)

7:30 a.m. Pre-Run snack

A peanut butter stuffed date and about half of a bottle of chocolate coconut water. I ususally eat more before medium-long runs but my stomach felt a little off this morning.

9:30 a.m. Breakfast

I was hungry after running 10 miles, so I dug right into the Baked Banana-Blueberry Oatmeal I made last night (recipe credit to Sarah at The Flying Onion). Baking yesterday saved me some time this morning, so all I had to do was warm it up, top it with sunflower seed butter, and enjoy it with coffee and soy creamer (x2!).

1:00 p.m. Lunch

Breakfast held me over for a really long time today! Lunch was zucchini fries (half with breadcrumbs and half without) and a new-to-me type of fake meat, Lightlife chick’n tenders. They tenders don’t have a lot of scary ingredients (always a plus) but they taste a little weird. I probably won’t buy them again.

 I also had a clementine.

2:30 p.m. Snack

After a quick trip to Target my stomach was growling so I had a brown rice cake with cream cheese and fig jam.

6:00 p.m. Dinner

I’m trying to use up leftovers/veggies before going out of town this weekend so I had some cheeze-y kale with wheatberries and cornbread crumbles for dinner. I also snacked on some unpictured veggies with horseradish hummus while making this.

6:30 Dessert

No yogurt yet today so 2% plain greek yogurt, walnuts, cashews, cinnamon, and warmed blueberries.

I usually like to have dessert right after dinner, a “close the kitchen” type of thing, but it’s early enough that I may go back for another snack later.

But that in a nutshell is what I ate today. Have a great night!

Deceived

Today was a beautiful day in Chicago. The sun was shining and there was hardly a cloud in the sky.

Buyer beware though, its cold and really WINDY! Chicago is so deceptive in this way, when I’m inside I’m lusting after being out in the sun but once I get outside I can’t wait to come back in. What to do?

After a morning of homework and an episode of Friday Night Lights (obsessed!), I headed outside for a nice and easy 4 miler. My legs felt fresh and I had a ton of energy but the wind kept beating me up! There were moments that I felt like I was going to blow over. Sheesh! Still, after being tied up inside all day with homework, it felt amazing to be outside for a little while :)

Lunch was recycled leftovers.

After dinner on Thursday night, we had some leftover beans and avocado. Not wanting the avocado to go bad, I mashed it into the beans and saved the mixture in the fridge.

Today, I spread one small tortilla with the avocado/bean mixture, sprinkled some nutritional yeast on top, added some chopped kale, and then topped it with another tortilla. I cooked it on the Foreman for about 5 minutes. It probably would have tasted better prepared on the stove but I was feeling lazy :P .

I also made some kale chips with nutritional yeast.

I served them with ketchup this time. In my opinion, ketchup > salsa.

This afternoon I did homework until my head hurt and now I’m finally taking a break and catching up on Top Chef.

Do any of you watch the show? I just finished the episode with Charlize Theron. Ahh-mazing!

Ice Ice Baby

Boy was it icy this morning! I went out for an easy 5 mile run only to find out that the sidewalks were basically ice rinks. Talk about frustrating. I tried to run in the streets when possible but sometimes they weren’t much better than the sidewalks, plus I had to avoid buses and other cars. I finished the run, which I guess is the important part, but I never really got any momentum, I felt like I was going half-speed the entire time :/.

Breakfast sure did make up for the sub-par run though :-D .

I’ve been wanting to try one of Katie‘s baked oatmeals for awhile now but never had individual ramekins or small baking dishes. However, when I was in Michigan last week, I found a couple in my mom’s cupboards that she said I could have. Score!

I got to work after my run mixing the ingredients for the Banana Baked Oatmeal. I followed the recipe pretty closely and used the suggested coconut oil and a bit of truvia (do not omit the oil, so good!). I also added a touch of vanilla extract and some cinnamon.

I popped the mix into the oven, jumped in the shower, and by the time I was done my oatmeal was ready! I let it cool for a minute or two and then removed it from the baking pan and topped it with some cookie butter and banana slices (the remaining banana from the recipe). I ate it with some super strong Kahlua coffee that I got in my Christmas stocking.

Please make this recipe now, it is so yummy, and I savored every bite ;)

Last night
After walking to and from Trader Joe’s, Ian and I were ready for some dinner. We still have leftovers from Christmas so I reheated some chili (veggie for her and turkey for him) and shredded some cheese for topping.

I didn’t have a whole lot of chili leftover, so I also made some poor man’s carrot fries.

I just chopped up two carrots, microwaved them for a little over a minute and served them with some ketchup. Very easy but maybe not so classy :P .

Dessert was the true star of the show, leftover pumpkin roll from Christmas.

This is definitely one of the better desserts I have made and everyone loved it. The recipe can be found here and I highly recommend you try it! I’m so sad to see it go.

I spent the rest of the night finishing my book and then watching No Strings Attached on my Nook Tablet. I actually enjoyed the movie, although the end was super cheesy (image souce). But what else could I expect, its a romantic comedy starring Ashton Kutcher :P
