Mission: Finish the Eggnog

I woke up this morning to rain, mist, and dense fog. It didn’t look like my run was going to happen outside :( . I also couldn’t convince myself to run the 9 miles on my schedule on the treadmill, so I figured I’d flip-flop my Wednesday and Thursday runs and plan on doing my longer run tomorrow in Michigan (outside). Problem solved! I ran 5 miles at 7.6 mph.

Breakfast
Breakfast was a repeat of yesterday, eggnog overnight oats. I’m sorry for all of the repetitiveness but I needed to finish off the yogurt and eggnog before heading out today. I omitted the chia seeds this time and it was even less thick. Perfect :)

I mixed in some pumpkin granola and a dab of Trader Joe’s Cookie Butter. I am very seriously addicted to the Cookie Butter, yum!

I also had some a lot of iced coffee with eggnog. In my defense, I do have a 5 hour drive today!

After I hit publish I need to put all of my stuff in bags and gather all of the furbaby’s things. I’m seriously the worst packer ever. I always wait until the last minute and stress out about it.

Ian showed me that picture this morning and I thought it was too cute not to share. Hopefully it will lighten up your Tuesday morning like it did mine :)

Workout
I hit the treadmill this morning for five easy miles. After my huge step-up in miles last week my ankle was bothering me a bit and knowing that I stride differently on treadmills than outside (does anyone else do this?) I didn’t want to push myself too hard. Injuries are not welcome here! I set the speed at 7.5 mph and cruised for a little over 30 minutes.

Breakfast

Breakfast was another stab at overnight eggnog oats. Last time they were a bit too thick so I tweaked the recipe to compensate.

Eggnog Overnight Oats
1/3 cup multigrain oats <– thought the looser texture would prevent thickening
1/3 cup greek yogurt
1/3 cup eggnog
1/4 cup almond milk <–added to loosen it up a bit
1/2 tsp chia seeds
1/3 sliced banana
1 tsp raisins

All stirred together and chilled in the fridge overnight.

This morning I topped my overnight oats with some pumpkin granola.

Delish!

The oats were definitely still thick, but this recipe was a vast improvement over the last!

I have a busy day ahead of me including work, getting a haircut, and packing for my trip tomorrow.

Eggnog Overnight Oats

So my lazy Thursday is over and I am back to the daily grind. Darn! ;)

My alarm went off at the early time of 5:45 and I begrudingly got out of bed and changed into workout clothes. Excuses floated around in my brain of why I didn’t need to go run but ultimately the truth that I’m in training predominated over all excuses and to the treadmill I went (image source).

I ran 7 miles alternating between an 8 min/mile and a 7:47 min/mile but I just wasn’t feeling it. The hour that I was on the treadmill felt like an eternity and I even got off a few times to go to the bathroom or get some water. My fingers are crossed that the weather holds and I can get my weekend runs in outdoors.

I had to be at work early today, so last night I packed some breakfast to eat at my desk. Ever since finding soy eggnog at my local grocery store, I’ve been curious how it would taste in overnight oats. After seeing Meghann at Meals and Miles eat and enjoy them yesterday, I figured it was time to try it out ;) .

In the overnight oats-
1/3 cup oatmeal
1/3 cup soy eggnog
1/3 cup greek yogurt (0%)
1/3 banana sliced
1/2 tsp chia seeds
dash of nutmeg
dash of cloves

This morning I added some granola and the last bit of chocolate peanut butter.

The taste was spot on, however the oats were really really thick. I even had trouble mixing in the granola! Next time, I think I would add either more eggnog or some milk. I could probably have omitted the chia seeds too.

Motivation Long Gone

Ah! Where has all of my motivation gone? I was so diligent about studying for the last week and a half that I think I’ve just reached my saturation point.

Anyway, my exam this morning went well. It was in a statistic computing class so the exam was in the computer lab and we had to write and use code to answer the questions. We were actually given two tries to take the exam but I was happy with my score after the first attempt and walked out of class early. Nice!

I went to the student lounge to study and eat lunch. I’m pretty sure I’ve talked about this before but I consider myself super lucky that my school has several microwaves for students to use. This saves money for commuters like myself, as we don’t have to buy food on campus everyday.

I heated up some leftover chickpeas, rice, and spinach

But this was really the star of my lunch. Best hot sauce EVER. It tasted so good on top of the blandish chickpeas and rice. I love heat in my food!

I also munched on some grapes while studying.

After practicum I was pretty hungry so I made a snack to tide me over until dinner and to prevent later snackage. I heated up a banana choco vitatop and crumbled it over some greek yogurt and kefir (good combo!)

I spent the afternoon studying err playing iassociate2 on my phone and wasn’t too upset to take a break to make some dinner :P

Another easy dinner tonight due to exam week. Ian and I shared the last of the roasted corn and red pepper soup and had some shrimp bao (another golden TJs find- but more on this another time). I also stir fryed from baby broccoli in canola oil and a touch of sesame oil with garlic.

Perfect dinner.

For a little something sweet, I mixed ricotta cheese with some apple pie preserves and pumpkin spice granola. I also had two egg nog covered almonds.

Back to studying for the rest of the evening. To get an idea of what I normally deal with while doing homework just take a look at this picture.

Yawn, I slept so well last night! My bed was so cozy and out apartment wasn’t blazing hot for once. Even still, the second my alarm went off this morning, I was up and ready for a run. What can I say? My burnout is over :) . It was misting and I’m running a Turkey Trot race in Michigan on Thursday, so I kept it simple with a 5ish mile run.

Breakfast
Last night while I was looking through our fridge, I saw a pumpkin butter jar with only a tiny bit of butter in the bottom. Immediately I tried to think of what I could do with such an insignificant amount of pumpkin butter. Then it hit me… overnight oats in a pumpkin butter jar!

In the mix: 1/3 cup oats, 1/3 cut almond milk, 1/3 cup greek yogurt, 1/2 tsp chia seeds, 1/2 tsp raisins, 1/2 small banana sliced, and cinnamon.

I topped it with pumpkin spice granola to amp up the pumpkinness ;) and had some coffee with soy eggnog.

Excuse the messy counters, we’re starting to pack for our trip to Michigan tomorrow.
