A Very Exciting Week

This past week has been incredibly exciting for a work week. I feel like something new/different/fun has happened each day and this never happens to me during the week, I’m usually so boring!

To start, I began training for the Goofy Race and a Half this week and I’m so in love with running right now! Don’t get me wrong, I also really like triathlons and at one point I thought I was going to be a tri convert, but ultimately my body craved more mileage. I’m a runner through and through. In fact, I tried to convince myself not to cross tain today so that I could run more. In the end I figured it wasn’t smart to add in extra mileage so early in the plan plus it was raining so I ended up at the pool, but still I’m re-finding that obsessed marathon runner in myself and it makes me excited!

On Tuesday I got to meet up with Kelsey for drinks! We each only had one drink but ended up getting into a 3 hour talk-a-thon. Craziness! We only realized how late it was when we both started to get hungry. Whoops.

Can we talk about the ridiculousness of the heart-noculars…. hahaha

Wednesday I had a double whammy. First, I treated myself out to lunch which NEVER happens. I’m pretty adamant about packing a lunch because it saves money and is usually better than whatever vegan/gf item I can find at a casual spot (unless it’s Chipotle but that’s a different story). Anyway, I had my formal office orientation and didn’t have anything that didn’t need to be refrigerated or warmed up so I grabbed lunch at Argotea.

They heated it up for me and I enjoyed it outside (wasn’t too hot for once). It was awesome!

Then when I got home, I had a big ole box from Chobani waiting for me. Of course the Chobani people are awesome and sent a little something for everyone. A beach towel, beach bag/cooler (the speakers play music and there’s a bottle opener on the side), and coupons for Ian and me….

And a box for Sonic to play in…

Thanks so much Chobani for thinking of everyone in my family :P. You guys rock!

On Thursday, my best friend from forever, Brian, was in town! Brian, Steven, and I ended up meeting for dinner at Native Foods Cafe and it was soo nice to catch up!

I ordered the Ensalada Azteca Salad: fresh avocado, cucumber and jicama salsa atop quinoa, romaine and Chef Tanya’s award winning mango lime vinaigrette. Topped with currants, toasted pumpkin seeds and cilantro.

I about died. So good!

The exciting thing today is that my research team is throwing an ice cream social for some interns we had working over the summer. Of course, only a few of them RSVP-ed but we figured we could still finish out the work week with some ice cream. Fortunately, my co-workers are awesome and will be picking up a dairy-substitute for me! Should be a fun afternoon!

Dollar Burgers & Race Registration

I can’t believe I leave for Boston in two days, crazy! Packing and preparations are currently underway but there will be more on that in tomorrow’s post.

I worked most of the morning (have some stuff to get done before leaving on Friday) but took a break around 11 to register for this.


Yep that’s right, next January I will be tackling the Goofy Race and a Half Challenge. I think I’m more excited about escaping the Chicago cold for a couple of days :).

Ian and I didn’t do a traditional grocery trip last weekend so it’s slim pickins at the apartment this week. We decided that in lieu of calzone Tuesday we would go to Bar Louie for dollar burgers (portobella for me).

I went with a portobella burger with pepper jack cheese, tomatoes, grilled onions, and pickles and it only cost about $3.00.

Ian and I also split fries and tots.

Not too shabby for dollar night!

I spent the rest of the evening doing homework and then at 11 plopped down on the couch to watch an episode of Friends before bed. I most definitely did not get enough sleep and am paying for it this morning!

White Christmas?

We woke up this morning to a light dusting of snow and a heavy layer of ice. Yuck! I love a white Christmas but I don’t love patchy snow that melts within a few hours. I also don’t love ice, especially when I have to run. I decided to let Ian sleep (he made it in around 2 am last night), wait out the conditions, and have a leisurely breakfast with my mom instead of heading out first thing for a run.


I also finished wrapping my Christmas presents while waiting for my food to digest. I may have even had a little help from one of Santa’s elves :P

Eventually I went out for a 4 mile run to loosen my legs before my Christmas half-mary tomorrow (training run). I felt great and was so glad I had waited for the sun to melt the snow and ice. No falls today!

Now I need to go get ready to spend Christmas Eve with my dad and step-mom.

Do you prefer white Christmas-es? I usually do but this year I’m torn. I don’t want to have to run through a bunch of snow or deal with driving through it. It is so pretty though!
