Getting My Paper On

After blogging yesterday I managed to knock out one of my papers. One down and one to go! I felt super accomplished afterwards and took a break to make a life changing egg salad sandwich.

When I saw this recipe on the PBS Fresh Taste blog, I knew I had to try it. I’ve made many of Jenna‘s recipes in the past and loved them all and I haven’t had egg salad in a long time, it sounded so good! I immediately bookmarked the recipe and added the necessary ingredients to my shopping list.

When Ian asked me to hardboil eggs yesterday, I plopped two extra in the pot and figured it was time to give the egg salad sandwich a try.

I made mine on Udi’s GF bread (why is gf bread so small??) and added avocado, bread and butter pickles, and habenero hot sauce. I also had some mushrooms with cilantro-jalapeno hummus and another pickle on the side. So good!

Productivity continued throughout most of the afternoon and I made good headway on my second paper. It’s a statistical analysis so it involves going back and forth between statistics software and paper writing. I managed to get a good start on it though.

By the time my mind was spent it was nearly 5 o’clock and my tummy was growling. Ian was out with friends for most of the day and we had plans to grab dinner when he returned later so I made a small chai smoothie to hold me over until he got home.

I liked it but I could taste the pepper in the recipe, kind of weirded me out!

Ian was in the mood for sushi and as I wasn’t all that hungry (underestimated the size of that smoothie!) I let him pick the sushi spot. We ended up at Seadog, a restaurant we’ve been to previously and enjoyed. Unfortunately last night was not the night. I had planned on writing up a review of the place but ended up being so disappointed that I only snapped a picture of spicy miso soup that took 30 minutes to show up at the table.

They also brought out our sushi before the soup, realized that we hadn’t yet received the miso soup, set the sushi on a seperate table next to a dirty rag, brought out our soup, and then about 15 minutes later brought the sushi to us. Now I’m sure the fish hadn’t been sitting out too long to make us ill but it was really unappetizing. Gross. I’m not sure I’ll be able to go back.

After dinner we ran some last minute errands, baked scones, relaxed on the couch watching Friends, and ate a little dessert.

I had a few scoops of Arctic Zero Mint Chocolate with a frozen samoa girl scout cookie. Yum!

Yesterday’s eats must have done me well because I’m feeling considerably better today :)

So Bored

I never thought I’d say this, but I’m so bored. I’m not used to having so much free time and I really don’t know what to do with myself. Luckily, work starts up again next week and classes the week after so I won’t have too much time to fool around.

Am I crazy? Is anyone else like this?

I watched a gross ridiculous amount of Felicity today, and the highlight of my afternoon was snacktime.

I mixed some apple pie preserves and pumpkin spice granola into a vanilla chobani, which must have been a stroke of genius. I can’t wait to have this again!

Dinner was interesting, I’d been eyeing this recipe for wild mushroom stroganoff for awhile and after finding dried wild mushrooms at Trader Joe’s last weekend, I figured it was the perfect time to give it a try.

I made a few simple substitutions- greek yogurt for sour cream and pistachios for pine nuts. I also added bacon into Ian’s portion.

Now I’ve never had any type of stroganoff so dinner tasted good to me but upon comparing our product to pictures of traditional stroganoff, I’m not sure the veggie version really did it justice.

The mushroom stroganoff still did taste pretty good though and I’ve be lying if I said we both didn’t clean our plates ;)

Dessert was the rest of the Arctic Zero with a crumbled caramel wafer and some Reeses Pieces.

I also had one of TJ’s mini ice cream cones. What can I say it was one of those kind of nights.

I’m going to go watch a movie with Ian and then get some sleep. I have a long run in the morning!

Things I Did Thursday- 12-29-2011

(1) Explored Netflix on my Nook and started watching Felicity. I was a little too young to get into the show when it first came out and now I’m hooked. I also had no idea J.J. Abrams (Lost) co-created the show. Crazy.

(2) Made a veggie-tastic lunch. To start, I chopped a million vegetables and then roasted them in olive oil, salt, pepper, and balsamic vinegar.

Then I microwaved a bowl of spinach with a chopped up sausage-less sausage

I mixed the roasted veggies, “sausage”, and spinach with some homemade dressing (english style pub mustard and more balsamic).

Hit the spot!

(3) Walked to Whole Foods to finish up grocery shopping. Despite my complaints about the ice this morning, it got up to 46 degrees today. Crazy Chicago weather! It felt good to get some fresh air and I even picked up a little treat :)

I just couldn’t help it after all of the recent reviews and giveaways :)

(4) Purchased and started my first book on my Nook, The Kitchen House. It was recommended by a family-friend. I’ll let you know how it goes!

(5) Had a really unphotogenic but delicious dinner.

Ian still had his leftovers from Tuesday night and I didn’t want to cook something just for myself, so I microwaved some cashew coconut rice (Archer Farms brand) with TJs Tuna in Red Panang Curry Sauce. It was good, but I prefer TJs Tuna in Green Curry.

(6) Watched the furball try to convince his daddy to give him some pork shoulder.

Cuteness always prevails and Sonic tried his first and only teeny tiny sliver of pork (we don’t usually give him table scraps).

(7) Indulged in some delicious arctic zero.

I had about 1/3 of the container with some reeses pieces and unsweetened coconut.

I definitely went back for a few more bites straight from the container!

My charged Nook and Felicity are calling me. I hope you had a great Thursday!
