Hey guys and happy WIAW! Today I thought I’d switch things up and instead of showing you what I ate in one day, I’m going to show you a few of the more interesting things I’ve been eating this past week. Let’s just say I haven’t been great about taking pictures of my food and my daily eats have been a little boring. Anyway, lets get to it!

{Breakfasts}
One of my new favorite ways to have breakfast, pumpkin protein oats with cranberry sauce and sunflower butter. The cranberry sauce was made using Emily‘s method by cooking raw cranberries in 1 cup of water over the stove and then adding maple syrup (Emily uses molasses) to taste. I think I added about 2-3 T for the entire batch, I like it really tart!
Another use for the cranberry sauce, spread on gf waffles and topped with banana, almond butter, peanuts, and a small drizzle of maple syrup. This is such a comforting breakfast.
Cereal! I currently have 5 boxes of Chex (of various flavors) in my pantry because they were on sale for $2 a box. Lately, I haven’t been having cereal for breakfast very often but if I ever want to finish off those boxes, I’m thinking it’s going to have to enter the rotation. This bowl is full of apple cinnamon Chex, honey nut Chex, banana slices, peanuts, and sunflower butter.
{Meals}
Last week I made a big batch of miso soup (no tofu, + seaweed) and loved to have it with a little siracha and some buttery brown rice toast on the side. It didn’t taste entirely authentic but I really enjoyed it.
On Monday evening, I made this quinoa (+ millet for me because I ran out of quinoa) to take to work for lunches. It’s a mix of grains, currants, pomegranate seeds, roasted acorn squash and a dressing made from olive oil, lemon, scallions, and parsley. It looks pretty (unfortunately not above) but I don’t love it so I’m not going to link to the recipe. I think it had a lot of potential but the foods just don’t go well together and I’m generally not difficult to please.
Salads. I try to eat some variation of one of these every day. This one is kale, butternut squash, avocado, dried cranberries, and pecans. Amazing.
{Snacks}
Last night, Ian and I went out for happy hour ($1 oysters!) and then grabbed another drink at a nearby bar. At the bar, I decided to enjoy an Original Sin Cider. I forgot how much I like their cider.
I’ve also been eating apples and Christmas cookies for snacks– hey, it’s all about balance right?

Today is our work holiday luncheon–so I’m feeling plenty of cookies and holiday snacks in my near future! I agree–it’s about balance, though. I’ll be sure to have a healthy dinner ready for this evening.

I’ve decided that it’d be a lot of fun to experiment with sleep deprivation this week (sarcasm), so I learned a fun fact about myself: when I don’t get enough sleep, I feel sick all the time! Hooray!
So lately, I’ve been craving nothing but eight full hours of sleep. Or even seven. I’d take anything over six at this point, really. I have, however, recently discovered that I’m a big fan of the chili powder + cumin combo in just about any dinner. Unfortunately, my pansy of a stomach can only handle that combo about once a week, but it’s sooooo good and perfect for winter.

I’m running low on sleep too and struggling to keep my eyes open during the day. Hang in there!
i’ve been craving pizza like a mad woman. i need to answer this craving sooner than soon but i’m going to try to wait til i make it to chicago because other pizza just doesn’t do it for me like a slice of giordano’s.

I know, sooo good!
Those pumpkin protein oats look so good. I sometimes put cranberry sauce on bread and use nut butter to make a “peanut butter and jelly sandwich”. I have been really craving some eggnog but am to lazy to get it. haha

I bet that assortment of toppings was amazing. And I know what you should do with all of that Chex cereal… Make puppy chow! There are so many awesome variations out there now like Almond butter, cake batter, red velvet cake, cookie dough, etc.
I made some traditional puppy chow but now I want to try all those crazy flavors! Cake butter??? Yum!
