Hey guys, I can’t believe it’s already time for another what I ate Wednesday, the weeks just keep flying by, reminding me that I really need to start Christmas shopping! Aaaah! I’m a horrible procrastinator! Anyway, like usual, I’m showing you the food I ate yesterday and thanks always to Jenn for hosting!

{5:15 am} Pre-run Snack
Before heading out for an 8 mile run, I had a medjool date stuffed with sunflower butter and a little glass of almond milk. This is usually the perfect amount of food to fuel me through an early morning workout and yesterday was no different. I had a VO2 max run on my schedule and it really seemed to fly by… even the intervals at 5k race pace!
{7:15 am} Breakfast
My morning was run was great but the almost winter chill left me wanting a hot breakfast. I cooked a pot of whipped banana protein oats, poured it into an almost empty peanut butter jar, and added a big spoonful of cranberry sauce. This was sooo good, I can’t wait to have it again!
I drank water with breakfast and then had a shaker cup of coffee, almond milk, and stevia when I got to my desk at 9.
{12:30 pm} Lunch
After a stressful morning at the office, I dove into a large kale, avocado, and tuna salad with orange muscat vinegar. I bought the vinegar last weekend to make salad dressing but found that I actually liked it a lot on it’s own. The vinegar taste was minimal and I really liked the citrus flavor– another great TJs product!
I also had an apple to round out my lunch

{6:30 pm} Dinner
I had quite the busy afternoon at work and by the time I got home I was already getting hungry. I’ve eaten a lot of salads lately so I thought I’d switch it up and made paleo pad thai. I made a few changes like subbing out all of the coconut products (I’m allergic) and chicken and adding tamari, white beans, and mushrooms but still I really enjoyed this recipe. I can’t wait to enjoy my leftovers!
{7:15 pm} Dessert
For dessert I had a small piece of dark chocolate and an Enjoy Your Life cookie that I decorated last Saturday with almond milk. I’m actually quite impressed by the cookies, they don’t taste too gluten-free or vegan-y– even Ian is enjoying them!
The rest of the night was spent on the couch lounging and watching Netflix with Ian.

How did you make the paleo pad thai minus the coconut stuff? I’d love to do that, since the coconut components of the recipe are so pricey! I’ve bought two Christmas presents…I really should get on that..

I just used tamari (gf soy sauce) for the aminos and olive oil for the coconut oil. It seemed to do the trick and I really liked the sauce!
Cranberry sauce is the best!!! The pad thai looks gooooood!!!

Your lunch looks delicious! I’m going to have to try that vinegar – sounds like you could do a lot with it. I try to always eat before a run – usually a banana or a little greek yogurt does the trick for me.

that cranberry sauce looks awesome on the oats. i’ve seen a ton of people doing that lately and i think i might need to try it. i’ve got a bag of cranberries in my freezer that will shortly be turning themselves into sauce. also i’m going to send you an email soliciting training advice from you – i hope that’s okay!

Yay cookies! I actually have tuna in my salad for lunch today, and a couple hours ago I had the pleasure of discovering that it leaked in my lunch bag on my commute! Hooray! Nothing like a fishy lunch bag to make friends at work! Haha.
Christmas shopping continues to be the bane of my existence. I’m going to Christkindlmarket before the Ragnar sesh tonight and am banking on finding something for my dad and brother there. All fingers crossed!

Oh no! Having a fishy lunch bag is the worst! As much as I love tuna, I feel bad even eating it at my desk because i know everyone around me can smell it!
I’ve been meaning to go to the Christkindlmarket for it’s food but I never thought of picking up gifts there. Great idea!

Haha it’s really easy! I use 1/2 cup oats, 1 tsp chia seeds, 1 1/2 cups water, 1/2 mashed banana, and 1/2 scoop protein powder. I cook the oats, chia seeds, and water until they start to thicken. Then I whip in the banana and protein powder. Super easy and the extra protein holds me over for a looong time!
My pre-run breakfast is always the same. Peanut Butter and Banana on an English muffin. Easy, sat and delicious.
Yum! I’ve never been able to have banana pre workout but I envy everyone who can. Pb + banana toast is so much better than plain pb toast!
