WIAW {12-05-2012}

Is anyone else as glad as I am that it’s Wednesday already? Most of my Tuesday was fine but then last night I felt like I couldn’t catch a break. All these little inconveniences added up (like my laundry not drying in our building’s pay-per-use machines) making for a frustrating evening. I’m ready for a new day!

Even though yesterday was a bit frustrating, it still was a good day of eating so I’m going to show you those eats today. As always thanks to Jenn for hosting!

{5:15 am} Pre-run snack

The usual medjool date stuffed with some kind of nut butter (yesterday was mocha peanut butter) and then a little almond milk to wash it down. I should really just drink water first thing but I prefer the texture of almond milk first thing.

Then I headed out for an 8 mile recovery run. My hamstrings were a little tight from my 20 miler on Sunday but otherwise I felt pretty good. My legs really wanted to fly but I kept my pace right around an 8 min/mile, no need to push too hard on a recovery day.

{7:00 am} Breakfast

My obsession with waffles is still going strong. I had two Van’s gf waffles with peanut butter, banana slices, roasted and unsalted peanuts, and Enjoy Your Life mini chocolate chips. There’s also a small drizzle of maple syrup on top. Delicious! I also had a small cup of iced coffee (and then more when I got to work).

{12:00 pm} Lunch

I got hungry really early yesterday so waiting until noon to eat felt like torture. Lunch was a new to me pre-made salad from TJs in a brown rice tortilla. The salad has quite a few herbs in it including mint and tasted really great as a wrap. I’m hoping to recreate it soon!

I also had an apple with lunch but forgot to take a picture.

{3:00 pm} Snack

It was a hungry day so I had a small handful of almonds from my desk stash.

{6:00 pm} Dinner

Dinner was a delicious salad with a base of baby kale, baby spinach, baby swiss chard, and shaved brussels sprouts that was topped with half an avocado, smoked coho salmon, and a sprinkle of hemp seed. I also made a vegan ranch dressing using veganaise, almond milk, garlic powder, dill, salt, and pepper. It hit the spot!

{8:30 pm} Snack

I had a small cup of rice chex, panda puffs, and Love Crunch gingerbread granola (love) with almond milk while watching Netflix with Ian.

What’s one of the best things you’ve eaten recently? I still can’t get over that black bean and chickpea salad!
