WIAW {08-22-2012}

Hey guys and happy Wednesday! It’s been a while since I’ve participated in WIAW and I figured it would be fun to link up this morning. Everything I show you will be from yesterday (Tuesday), enjoy :) .

{5:10 am.} Pre-run snack: unpictured date with almond butter and a few sips of rice milk.

After eating and getting ready, I headed out for a general aerobic 10 miler. I was concerned about the run given that I had completed 13 miles on Sunday but surprisingly my legs felt okay. I ran conservatively the first half and then picked up speed during the last few miles when I could tell that I still had energy left. It wasn’t my fastest 10 mile run but I felt good doing it!

{7:30 a.m.} Breakfast

I was running on the later side and threw together a quick breakfast by spreading a little more than half of one side of a brown rice tortilla with Naturally Nutty pepita butter and the other half with almond butter. I topped the nut butters with banana and raisins and then put it in the Foreman for almost 5 minutes.

The result was a wonderfully crispy and gooey nut-butter-dilla that I ate with champagne grapes and the rest of the banana (unpictured). Why are champagne grapes so difficult to eat? I swear I must have eaten a million tiny little stems.

{11:45 a.m.} Lunch

I usually try to wait until noon to eat lunch but my stomach was growling so loud that I had to dig in a few minutes early. I had some curried tofu salad (very loosely followed this recipe) on spinach with grape tomatoes.

I also had some cherries that were on their last leg but tasted pretty good.

I had to make a phone call during lunch so I stepped outside and sat on a bench in a park near my office. When I first arrived some kids were playing flag football and I enjoyed watching them for a while.

I also explored a nearby farmer’s market. I need to go back next week with cash! They have amazing sounding nut butters for only $5 and they have okra. I’ve never been able to find fresh okra in Chicago!

When I got back to my office, I realized that I was still hungry and had a plum and a few bites of a Banana Foster Larabar Uberbar (less than half) before my afternoon meeting.

{6:45 p.m.} Dinner

Dinner tonight was shrimp tacos with veggies, corn, and avocado. I cooked the shrimp and veggies in TJ’s taco seasoning (very spicy!) and we used roasted frozen corn. I also cooked some edamame in taco seasoning to get my soy quota in for the meal. The edamame was just okay, it didn’t soak up the spices like black beans usually do.

My mouth was on fire after dinner so I tried a piece of a new chocolate find from TJs.

I was so excited to see the stone ground Mexican chocolate at TJs this past weekend for half the price of the name brand version that I buy at Fox & Obel (a fancy schmancy market in Chicago). If you’ve never tried this stuff, please do. It is amazing!

I got my bake on after dinner and made Ian some chewy vegan chocolate chip cookies and then made myself some lightened up summer granola. Both turned out well, the granola is one of my all-time faves!

{8:30 p.m.} Dessert

I knew I’d do a lot of granola taste-testing so I saved granola for my dessert. I ended up having some with a few banana slices and chocolate chips. Yum!!

The rest of my night was spent reading on the couch and relaxing with Ian. True to my grandma-ness, I passed out shortly after 10.

  1. I wish I had gone to bed at 10 o’clock last night! I’m in a horrible rut this week. Going to bed too late (after 11) and because of that I can’t get up early to get my day started when I want to.

    I might be running half of the Goofy challenge this Jan. – thinking of running the half marathon with my friend who is running both :)

      I’m a mess when I go to bed after 11. I wake up at 5 and I just can’t get moving without a lot of sleep!

  2. Oh, everything you’ve posted photos of looks amazing! (Maybe partly due to the fact that I ran 12 miles this morning and am feeling like I could eat my face off.) It’s exciting that you found okra up there. I’m getting used to eating it after living in the South for years and it would be nice to find it up in the Chicago area if I wind up moving up there (which is becoming more and more likely).

    The best think I’ve eaten lately was a really tasty veggie burger from this place in Atlanta. I usually go to bed around 9 because I get up at 5 to get my run in. I need lots of sleep to recover well.

  3. Sooo looks like I’ve got to make a TJ’s trip this week…haha. That chocolate sounds so intriguing! Once upon a time after the BTN Big 10K I was high on life for kicking butt, so I made an impulse dark-chocolate-filled-with-speculoos (cookie butter) checkout buy at TJ’s. Best. Idea. Ever. IT WAS SO GOOD. But seeing as how I can put away a jar of speculoos in like a week and a half (oops), that should come as a surprise to no one haha.

    I haven’t made granola since early April! That needs to change stat. If only I could convince the weather to not get back up to 90 this weekend so turning the stove on doesn’t sound like a death sentence…

    • I bought that chocolate bar a while ago (before I had to be gf), it is amazing!! Speculoos is the best thing ever, I just wish it didn’t have wheat (and maybe dairy?) in it!

      Haha and amen to the oven thing. I was sweating last night in the kitchen. Not fun at all!

  4. The best thing that I have eaten recently is pumpkin oats. First time making my oatmeal with pumpkin and boy its so delicious! Granola sort of upsets my stomach but I used to love almond butter granola. I usually go to bed at 11:00 or 11:30

    • So good!! The foreman is my favorite thing to press sandwiches and make quesadillas on. I don’t think I’ve used it for grilling in a loooong time!
