Hey guys and happy wiaw! I know I’ve taken a few weeks off from these posts but given that I was at home all day yesterday and could take pictures of my eats, I figured it would be a wonderful opportunity for me to join back up.
Once again, thanks to the lovely Jenn for hosting. Enjoy!
{4:45 a.m.} Pre-workout snack
Trader Joe’s Nothing But… Flattened Banana, KIND granola, Valencia pb, and half of the protein shake (blend of rice and pea protein).
After eating, I headed over to the gym to go to a cycling class. I’ve been a member at my gym since April and I have yet to go to a class! Can you believe it? Well, given the temps and the forecasted rain, I figured yesterday would be the perfect opportunity to try one out. I liked it but it wasn’t as hard as I remember. I’m not sure if the class was less difficult or if I’m just used to cycling and need to increase my speed/weight on the wheel.
On my walk home I got soaked in a torrential downpour even though I was using an umbrella, wonderful. I quickly changed and did the abs routine from Oh She Glows Whittle My Middle I. My back has been bothering me lately and I’m wondering if it has to do with a weak core so I’m challenging myself to complete the month of workouts. Wish me luck, I’m horrible about strength workouts!
{7:30 a.m.} Breakfast
I took full advantage of not being in a rush to make strawberry banana buckwheat pancakes. I topped them with more peanut butter and maple syrup. I basically licked my plate clean
. With breakfast I drank lots of water and some carrot juice when I took my supplements (probiotics, fish oil, red blood cell support).
{12:00 p.m.} Lunch
I had a “quesadilla” made with a brown rice tortilla, hummus, nooch, mushrooms, and dinosaur kale (now at TJ’s!) with turnip “fries”. I topped my ‘dilla with TJ’s spicy pico and had my “fries” with lots of organic ketchup. I love ketchup.
I wanted something sweet after lunch so I had some applesauce mixed with nut butter (try it, it’s awesome!), more granola, and some blueberries. It hit the spot!
I spent my afternoon shopping. I picked up a birthday present and then bought myself some work clothes. I thought that it was going to be a drawn out process but I managed to find a ton of cute but professional looking clothes in one store and finished it all up. I spent more than I wanted but given that I bought multiple outfits it really wasn’t so bad.
{3:45 p.m.} Snack
When I got home from shopping I had the other half of the protein shake while reading Catch-22 and watching the end of the Ellen Show. Does anyone else like to have background noise when they read?
{6:00 p.m.} Dinner
This is obviously not a very pretty dinner but I had quite a few things in the fridge that were on their last legs and needed to be used. I stir-fried baby broccoli, green beans, leftover lentils, and black beans and then added half of an avocado and jalapeno hot sauce. Random or not, this dinner tasted really good!
{7:00 p.m.} Dessert
I like to eat dessert right after dinner and then “close” the kitchen for the night so my sweet treat followed shortly after I finished eating. I had a little more than a serving of Tempt Vanilla Bean with one of my oatmeal raisin cookies. This is the ultimate combo but always leaves me wanting more and last night I satisfied that with a little more Tempt and a piece of dark chocolate
.
{8:00 p.m.} Snack/ Drink
I ended up sipping on one of these Apple Cider Vinegar drinks while I did some baking. I made Ian these muffins but stuffed half of them with fig butter and the other half with mango butter. We shall see how he likes them, they do smell delicious!
Tuesday night was spent lounging on the couch reading and watching t.v. Waking up before 5 a.m. makes me incredibly lazy in the evening!
What delicious things have you had lately?

Those pancakes look so good that I am going to make them this weekend
! I ate some really good mussels on Monday night from a gastropub! Yum
. Have a great day
i made my best friend a birthday cake last night..peanut butter cake with chocolate frosting..definitely an indulgence but SO good!
I love staycations. Sometimes they’re the best kind of vacations.
Staycations rock. Glad you’re enjoying yours! How are the turnip fries compared to say, sweet potato fries? I’ve never tried any other root vegetable in the oven.
Love The Ellen show! Fig butter stuffed muffins no chance they can be bad!
Never seen those Apple Cider Vinegar drinks before, looks kind of good! What does it taste like???
I love mussels, sounds delicious!
Agreed although about 3 days in I’m ready to feel productive again.
They’re good and less starchy than sweet potato fries. If you’re craving a fry substitute my recommendation is to make sweet potato fries but if you want something different and lighter, then turnip fries are a good bet.
I know, I love Ellen. I wish I could watch the show more often!
Like really good vinegary apple cider! I know it sounds weird but it works! There’s also a grape one that’s pretty good and an apple honey flavor that I haven’t tried.
um holy bejesus those pancakes look amaaaaaazing!
Sorry you got caught in the rain, but at least you were on your way home from the gym and probably wearing athletic clothing. I’d much rather be stuck in a downpour in running shorts than in jeans.
I definitely read/work at home with noise (generally TV or a movie) on in the background, generally something that I’ve watched a gazillion times. It helps me concentrate.
They’re so good, you should try them!
You’re right. I’m also lucky I wasn’t on my way to the gym. That would have been a major let down!
I’m with you, loud background noise helps me focus. In college I always studied at the undergrad library where it was more social, the grad library was too quiet.
That sounds amazing!!
those are some impressive eats! i would do more blogging about my food but i eat the same things every day. it’s so boring i fall asleep thinking about it.
Haha I totally get in ruts where I eat the same things every day. I’m lucky to be home for a few days though so it’s been nice to change things up a little bit.
That quessadilla looks so yummy!! I love your blog header, btw!
Thank you
All your food looks soo good! I’m horrible at strength workouts too. I always feel like I’m doing them wrong!
Me too! And I get bored of them quickly and end up stopping them short.
