I can’t believe that another week has passed and its already time for WIAW. Crazy! Today I’m going to post my eats from yesterday; remember to check out Jenn’s blog Peas and Crayons for more information!
{6:00 a.m.}
I woke up and headed out for a run. I’d usually eat something small before running (a date w/ pb or a handful of cereal) but after a night of cocktails, I really wasn’t in the mood for a snack. Plus, my friend was sleeping on our couch and I wanted to keep the noise level in the kitchen to a minimum.
{7:45 a.m.} Breakfast
6 miles later I was ready for some breakfast. I hadn’t prepped anything beforehand and was craving overnight oats so I mixed 1/3 cup oats, 1/3 cup 2% greek yogurt, 2/3 cup coconut milk, chia seeds, and 1/2 banana (sliced) in a Peanut Butter & Co jar and then set it in the freezer for 10 minutes.
I pulled it out and topped it with gf granola. The overnight oats had almost set, the freezer trick seems to work in a pinch!
{11:20 a.m.} Lunch
I reached for a handful of pretzels around 11 but knew that wasn’t going to be enough so I dug into my lunch early. I really enjoyed the green curry. It tasted good, was vegan and gluten free, and didn’t have any scary ingredients. I’ll definitely buy it again!
{3:00 p.m.} Snack
I don’t know if I was actually hungry or just really craving veggies but I ran out to the grocery store near my office and picked up a bag of carrots, broccoli, and cauliflower and some cucumber, dill, & feta dip made with greek yogurt. It was the perfect afternoon snack. I left the leftovers in my fridge at work, hopefully a veggie snack will become a habit.
{6:00 p.m.} Dinner
I kept the veggie theme going with dinner and threw together a salad with mixed greens, edamame, chopped beets, goat cheese, and sesame ginger dressing.
I also had a mini corn tortilla with hummus and cheese. I felt like I needed some carb-age.
(7:30 p.m.} Dessert
After dinner I baked a loaf of peanut butter bread for easy breakfasts this week. I sampled a small slice for dessert with a few spoonfuls of hemp ice cream.
The rest of my Tuesday night was spent doing laundry (one of my least favorite “chores”) and watching Mad Men. Ian and I also walked to Dairy Queen but they were out of Cake Batter Blizzards
. Ian had a cookie dough blizzard and I had a bite or two but it just wasn’t working for me, I need to try the cake batter one!

That curry sounds amazing. I’ll have to bribe my roommate to bring some back with her when she comes back to Orlando!
They have a red curry one too and I believe they were only 99 cents when I bought them. Can’t go wrong with that!
Greek yogurt feta dip sounds pretty good!
It was really tasty and fairly light in calories for veggie dip!

I hadn’t had them in so long and I bought them on impulse last weekend. It was such a good call!
I really want to try the cake batter blizzard. I am very fond of their new peanut butter frozen hot chocolates though!

I bought it but it was from a grocery store in Michigan so I’m not sure which brand it is. I can check and let you know if you’d like?
That greek yogurt dip sounds good! I basically love anything with dill in it! I’m not huge on ice cream, but I do have a place in my heart for self-serve froyo!

I have not tried DQ’s Cake Batter blizzard, but it sounds delicious!!
I love the PB& Co peanut butter. You can find it at a normal grocery store and its not as expensive as some of the other brands!

Its very good and a lot healthier than typical veggie dip!
