When I was busy studying for finals and writing papers I kept thinking of all of the fun things I could do when I was finished. I could go to the movies, go out for drinks after work, ride my bike for hours in the evening, etc. but since I’ve graduated all I’ve wanted to do is lay around and be lazy. I’ve watched a lot of Felicity and started rereading the Harry Potter books. In fact the only productive thing I’ve really done is bake and I’ve done A LOT of baking.
I’m okay with the laziness thing for now but I’m hoping it ends soon. There are so many things I could be doing!
Anyway, I ended up taking yesterday off from working out because my hamstring felt weird. I slept in instead and enjoyed a breakfast cookie.
On Sunday night I mixed together 1/3 cup Holly’s oats, 1/3 cup oatmeal, 1 T crunchy sunflower seed butter, 1/2 tsp chia seeds, and 1 T almond milk. I then spread it out on a plate and put it in the fridge overnight. When I woke up yesterday I put the cookie in the freezer while I made coffee and then topped it with greek yogurt, raisins, banana slices, and panda puffs.
It tasted good but I’ve never quite gotten the texture right. My cookie is always slightly mushy in the center… any suggestions?
Work was super busy and I worked straight through the morning until 12:30 when my stomach started growling and I knew that I needed to break for lunch.
I had a salad with arugula & spring mix, blackberries, walnuts, and roasted tempeh. It was delicious and hit the spot.
I also tried a new-to-me brand of almond milk yogurt with gluten free granola.
I didn’t love the yogurt and I probably wouldn’t buy it again. It had a weird texture and was super sweet- when I got to the bottom I had to add some pretzels to the yogurt to combat the sticky sweetness. Ick!
My afternoon at the office was a little more relaxed but busy enough to prevent the it from dragging on. Before i knew it, it was 5:45 and I was home making dinner.
When I saw this recipe last week, I knew I had to make it. I mean farro, strawberries, & goat cheese? That combo has to be delicious right?
Well it way surpassed my expectations, every steamy bite of it
After dinner the laziness set in and my Nook and I had a hot date on the couch. Eventually, I managed to get my lazy butt up and throw together some dessert.
I had some Cookies and Cream Arctic Zero and an avocado chocolate chip cookie. I know that an avocado cookie sounds bizarre but they were absolutely amazing (no avocado taste at all) and once I perfect the recipe, I’ll be sure to post it!
I spent the rest of the night watching Felicity and making Ian a personal bread pudding (I told you I’ve been baking). It was glorious

I only wish I had the opportunity for laziness! The feeling after a big time-suck is over is awesome though – so much free time to fill with other fun activities!

How do you like the Arctic Freeze? I always see it but hesitate. With so little calories, does it still satisfy your ice cream craving?
it doesn’t taste like ice cream at all so if you’re looking for an ice cream substitute don’t buy it! Its packed with protein and kind of tastes like a frozen protein shake which I don’t mind (I think it tastes good) and it doesn’t have any super scary ingredients. I really like it when I want something cold but not super heavy after dinner but the bottom line is that if I have a craving for ice cream I go for the good stuff, not Arctic Zero

I feel you on that! I would rather have one tiny portion than a ton of fake when it comes to ice cream. But Arctic Zero still intrigues me!
I’d give it a try. Like I said, I like it! Just make sure you go into it knowing that its not going to taste like ice cream

rereading Harry Potter is always productive in my book…at least that’s what I tell myself each time I reread them…

I subtitute banana, greek yogurt, avocado, sweet potato, etc for butter all the time. Adds sweetness at the same time!

I pinned that strawberry farro recipe too! And I made some delicious avocado cookies (from The Daily Crumb) for Cinco de Mayo. So soft and delicious!
The strawberry farro is to die for, you have to make it. I can’t wait to eat the leftovers!
