A Loong Monday and My First Burrito Bowl

Good evening :) . Was everyone else’s Monday as long as mine was? Today could have lasted a week!

I’m tired, have some homework to do, and have a newly assigned bed time- so let’s get right to it!

Today I got to enjoy one of my all-time favorite salads for lunch-

I know it looks messy and a little disgusting, but it’s so good! Roasted veggies, roasted potatoes, half a tofurkey sausage, hummus, and bone suckin’ sauce. If you’re a visual eater, I get your aversion, but still I beg you to give it a shot!

I also enjoyed a breakfast anytime cookie that Ian decided tasted “too healthy” for him.

It’s truly his loss, I <3 these cookies :)

Towards the end of work, with a 3 hour class looming ahead, I snacked on a figi apple to hold off my hunger until I could get home.

Also, check out how huge my huge new water bottleI have a new personal goal of drinking at least 2 bottles worth during the day when I’m out of the apartment. No more dehydration for me!

While Monday’s tend to drag on, today got a little bit better when I received a text from Ian saying that he had picked up Chipotle and dinner was taken care of for tonight. Not cooking is always a plus but not cooking and Chipotle for dinner on a Monday night? Unreal.

So I introduce you to my first EVER veggie burrito bowl (I’ve definitely been to Chipotle just always ordered the salad). This baby was loaded with brown rice, black beans, fajita veggies, all the salsas, and guac. YUM!

I could honestly only eat half of this, the rest is safely stashed in my lunch bag for tomorrow ;)

Dessert was the very thing I’ve been craving since Saturday, a cottage cheese parfait!

Layers of fig jam, cottage cheese, crumbled red velvet brownie, and sunflower seed butter. This may be the best thing I’ve eaten all week, even Sonic is bowing down to it’s deliciousness :P

Alrighty, sorry for the rambling post. Plans for the rest of the night: homework -> Alcatraz -> bed.

Post-19 & Monday Goals

Happy Monday! I hope everyone had a great weekend :)

Mine was packed with creating a new recipe, enjoying a lazy Satuday morning, running with Ian, baking, running 19 miles, an Indian buffet lunch, trip to the Anti-Cruelty Society, homework, a looong nap, a trip to Lickity Split (blogged about it here), and watching last week’s Alcatraz and Walking Dead.

Sorry not to have any pictures from yesterday afternoon. I took them but I was so out of it post-run that they’re not very good and I don’t have much to say. I definitely suffered from a long-run hangover yesterday!

I’m feeling much better this morning (except for my calves, they’re screaming) and I just celebrated cereal Monday.

I had about 1/2 cup Multi-Grain O’s, 1/2 cup Toasted Oatmeal Flakes, 1/2 a big banana, cashews, chia seeds, unsweetened plain almond milk, and a peanut butter spoon.

Shouldn’t every spoon be a pb spoon?

Also, I decided that every Monday I’m going to set at least three goals for myself for the week. Certain goals may be repeated week-to-week but I figure it will be easier to measure my progress with short-term goals as opposed to longer-term ones. So here are this weeks goals:

Monday Goals, 2/27/2012
1. Get in bed every night by 11 p.m., no exceptions. I can stay awake in bed but I must physically be there by 11.
2. Avoid mindless snacking, especially on higher calorie foods like granola. Constantly snacking makes me feel gross and I need to learn to differentiate real hunger from boredom/stress.
3. Listen to my body. It’s no doubt that I pushed myself yesterday, so this week I need to take it easy and if my body is sore/tired, respect it. This may include cutting back on some mileage and that’s ok, there is no need to force an over-use injury.
