Mediterranean Monday

Whoever said quick meals can’t be delicious?

Like I’ve mentioned before, Monday’s are my longest days of the week. By the time I get home I’m usually hungry, tired, and feeling lazy. The last thing I want to do is spend a lot of time cooking.

Monday nights are a great time for leftovers, but they don’t need to be. Sometimes everyone wants a new and exciting dinner :)

Enter tonight’s dinner which took less than 10 minutes to prepare.

While cooking some cheeze-y kale, I assembled a falafel pita.

I heated half of a whole wheat pita in the toaster oven and once it was warm (not toasty!) I spread the inside with Trader Joe’s tahini. Then I stuffed some arugula and bread and butter pickles inside, along with a thawed and heated frozen falafel (TJ’s brand).

The taste of the falafel was actually restaurant-quality, but I was a little shocked by their high calorie content. I ended up just using one and slicing it in half. Luckily, it was flavorful enough that I didn’t need more!

Simple, tasty, and fast. What more could you want?

Plus, a quick dinner leaves you with more time to make dessert ;) .

Chocolate and Endurance

The weekend is always too short. Is it really Monday again?

Early Monday’s always call for an easy breakfast (and lots of coffee!!).

Crispy rice cereal; Honey, Almond, & Flax cereal; banana; and raisins. Plus a peaut butter spoon.

Mmmm it’s no  White Chocolate Wonderful but it’s still really good!

And breakfast would not be complete without one two cups of coffee.

Also, in running news, animal studies are indicating that eating chocolate may actually result in increased endurance capacity. What do you think? To me it seems like another great reason to eat chocolate :P .
