Hey everyone! I hope your Wednesday flew by
I’m pretty beat and I have a lot of homework (sigh) to do tonight so I’m going to keep this nice and short.
My yoatgurt kept my full for almost 5 hours this morning. Crazy! When I did get hungry, I had some leftover fire-pot soup from Monday night.
It might have been even better today. It was definitely spicier
Mid-afternoon stomach growls were kept at bay with an iced oatmeal cookie clif zbar.
I love the new flavor. Well done clif, well done.
Enter work, work, homework, and a random trip to Target (Chobani’s on sale!), and then it was time for dinner.
Ian’s been working like crazy so he’s been picking food up on his way home which leaves me to be creative in the kitchen curb my ridiculous tempeh craving.
Tonight’s rendetion included a bed of arugula, warmed brussels sprouts from last night, and sauteed tempeh and mushrooms all mixed in a homemade mustard vinaigrette.
It felt so good and clean to eat this.
However, dinner also left me wanting a little more so I whipped up a simple pumpkin smoothie.
Into the blender went 1/2 a banana, 1/2 cup of pumpkin, 1 cup almond milk, pumpkin spice, and a tiny bit of agave.
Topped with TJ’s rice cereal and pumpkin seed granola, it was a great snack.
Back to the books!
Do you like tempeh? How do you prepare it?
