I never thought I’d say this, but I’m so bored. I’m not used to having so much free time and I really don’t know what to do with myself. Luckily, work starts up again next week and classes the week after so I won’t have too much time to fool around.
Am I crazy? Is anyone else like this?
I watched a
gross ridiculous amount of Felicity today, and the highlight of my afternoon was snacktime.
I mixed some apple pie preserves and pumpkin spice granola into a vanilla chobani, which must have been a stroke of genius. I can’t wait to have this again!
Dinner was interesting, I’d been eyeing this recipe for wild mushroom stroganoff for awhile and after finding dried wild mushrooms at Trader Joe’s last weekend, I figured it was the perfect time to give it a try.
I made a few simple substitutions- greek yogurt for sour cream and pistachios for pine nuts. I also added bacon into Ian’s portion.
Now I’ve never had any type of stroganoff so dinner tasted good to me but upon comparing our product to pictures of traditional stroganoff, I’m not sure the veggie version really did it justice.
The mushroom stroganoff still did taste pretty good though and I’ve be lying if I said we both didn’t clean our plates
Dessert was the rest of the Arctic Zero with a crumbled caramel wafer and some Reeses Pieces.
I also had one of TJ’s mini ice cream cones. What can I say it was one of those kind of nights.
I’m going to go watch a movie with Ian and then get some sleep. I have a long run in the morning!
